  • 1 cup fresh mint leaves (pudina)

  • 1 teaspoon chaat masala

  • 1 teaspoon black salt

Step-by-Step Recipe Method

1st Step: Make the Puri Dough

In a bowl, mix semolina, maida, baking soda, and salt. Slowly add water and knead into a stiff dough. Cover and let it rest for 15 to 20 minutes. The dough should be firm, not soft. If it is soft, the puris will absorb oil and become soggy.

2nd Step: Roll and Fry the Puris

Mash some peas with the back of a spoon to thicken the gravy. Add water if needed. Simmer for 5 to 7 minutes. The ragda should be thick and flavourful.

4th Step: Prepare the Potato Filling

In a bowl, mix the mashed potatoes with a pinch of salt, chaat masala, and fresh coriander. Keep aside.

5th Step: Make the Spicy Mint Water

In a blender, combine mint leaves, coriander leaves, green chillies, ginger, cumin powder, chaat masala, black salt, amchur powder, salt, and lemon juice. Add 1 cup of water. Blend until smooth. Strain through a fine sieve. Add the remaining cold water. Stir well. Chill the pani in the refrigerator. It should be cold, spicy, and tangy.

A mistake I made: I didn’t strain the pani. The mint leaves made it gritty. Always strain for smooth, clear pani.

6th Step: Make the Imli Chutney

Soak the tamarind in warm water for 20 minutes. Squeeze out the pulp. Strain to remove seeds and fibres. In a small pan, add the tamarind pulp, jaggery, cumin powder, red chilli powder, black salt, and salt. Cook on low flame for 5 to 7 minutes until it thickens to a syrup-like consistency. Let it cool.

Take a crispy puri. Make a small hole in the centre with your thumb. Fill it with a spoonful of ragda. Add a little mashed potato on top. Dip the filled puri into the spicy mint water. Let it soak for a second โ€“ not too long, or it will become soft. Place it in your mouth. Eat it in one bite.

8th Step: Garnish and Serve
